Hot Honey Spiced Nuts
I loved a roasted nut. A flavored nut. It’s my thing, and these are the best. Just make them!
INGREDIENTS
4 cups raw nuts (I do 2 cups macadamias, 1 cup almonds, 1 cup cashews)
4 tablespoons extra virgin olive oil
1 tablespoon hot honey (Zab’s is my favorite)
2 tablespoons paprika or espelette pepper
1/2 cup rosemary, chopped (literally an entire clamshell worth)
1 large garlic clove, chopped
1 tablespoon salt
1 teaspoon black pepper
dash cayenne + pinch chili flakes (especially if your honey isn’t that hot)
1 egg white, frothed
INSTRUCTIONS
Preheat oven to 350 degrees.
In a small pot, add the olive oil, honey, rosemary, garlic, paprika, cayenne, chili flakes, salt and pepper. Cook and swirl around until bubbling a couple minutes but not going crazy. Should be all infused (too much cooking will make it stick together/coagulate weirdly). Remove from heat to cool a little.
Froth up an egg white until it about doubles in size. Add it to the bowl of nuts and toss around so evenly coated.
Add the oil mixture to the coated nuts and toss lightly to disperse.
Cover a baking sheet with parchment paper and lay the nuts down in a single layer. Sprinkle with more salt. Roast for 20 minutes.
LET THEM COOL. Don’t burn them. They will be soft and NOT CRUNCHY when they come out of the oven, that’s ok. So just chill and be patient, you want the good stuff to stick and harden. Then you’ll have delicious CLUSTERS like this:
